Ingredients

  • ½ small cucumber, chopped
  • 1 whole red onion, thinly sliced
  • ½ avocado, sliced
  • A handful of fresh radishes, chopped
  • A generous scoop of cooked wild rice
  • 1–2 heaped spoonfuls of ChicP Spinach Hummus
  • Splash of water
  • Drizzle of extra virgin olive oil
  • Squeeze of lemon juice
  • Sprinkle of mixed seeds (pumpkin, sunflower or hemp work well)

How to Make It:

  1. Prep your veg: chop the cucumber, onion, avocado and radishes.
  2. Spoon the cooked wild rice into your bowl to create the base.
  3. Arrange the veg over the rice however you like.
  4. Add a dollop of ChicP Spinach Hummus to the centre.
  5. To make the dressing, mix another spoonful of hummus with a splash of water, a drizzle of olive oil and a squeeze of lemon until smooth and pourable.
  6. Drizzle the dressing over your bowl.
  7. Finish with a generous sprinkle of seeds.
