This vibrant, flavour-packed pizza is the ultimate celebration of golden crusts, rich truffle hummus and caramelised toppings. Perfect for an indulgent vegan dinner, a crowd-pleasing lunch or a new go-to for your pizza nights, this recipe brings together sweet red onions, earthy mushrooms and wilted spinach, all layered over ChicP’s Rich and Indulgent Truffle Hummus for a deep, savoury punch.
Think of this as the love letter your taste buds have been waiting for: rich flavours, crispy crusts and a drizzle of garlicky goodness. Plus, it is easier than it looks, ready with just a few simple steps and no need to mess around with complicated doughs.
- Infuse your oil. In a small saucepan, combine 60ml olive oil, minced garlic, dried oregano and salt. Warm gently over low heat for about 5 minutes until fragrant, then set aside.
- Caramelise the onions. Heat 1 tbsp olive oil in a skillet over medium heat. Add the sliced red onions with a pinch of salt and cook, stirring now and then, until soft and golden, about 15-20 minutes. Set aside.
- Wilt the spinach. In the same pan, add the fresh spinach and cook until just wilted, about 2-3 minutes. Set aside.
- Cook the mushrooms. Toss the sliced mushrooms into the pan and cook until softened and juicy, about 5-7 minutes. Set aside.
- Prep your base. Roll out the store-bought pizza dough to fit a cast iron skillet. Preheat your oven grill to high and heat the skillet on the stovetop over medium-high heat.
- Build your pizza. Spread 120g ChicP Rich and Indulgent Truffle Hummus over the dough. Top with caramelised onions, wilted spinach and mushrooms. Season with salt and pepper.
- Crisp it up. Brush the pizza crust with the infused garlic oil, then cook the pizza in the skillet for 5-7 minutes until the bottom is golden and the dough is almost cooked through.
- Finish under the grill. Brush the crust again if you like, then pop the skillet under the grill for 2-4 minutes until the toppings are hot and the edges are gorgeously browned.
