Perfect for a party starter, a snackable lunch or a colourful addition to your next dinner spread, these little beauties bring together the earthy sweetness of our Beetroot & Horseradish Hummus with salty feta and fresh spring onion for a dish that is sure to disappear fast.
Think of these as your go-to for effortless entertaining: bold flavours, a pop of colour and just the right balance of indulgence and feel-good ingredients. Plus, they are ridiculously easy to make and you can prep them ahead, leaving you free to actually enjoy your gathering.
- Mix up your batter. In a bowl, whisk together the self-raising flour, semi-skimmed milk, egg and salt until smooth.
- Fire up the pan. Heat a non-stick frying pan over a low-medium heat and add a teaspoon of butter. Spoon small amounts of batter into the pan to make mini circles, about a teaspoon each.
- Flip to perfection. When you see little bubbles on top, flip the blinis and cook the other side until golden. Repeat until all the batter is used up, then set your blinis aside.
