This nourishing, flavour-packed bowl is the ultimate hug in a mug. A comforting, brothy vegetable soup taken to the next level with a generous spoonful of our Velvet Hummus stirred through. Creamy, hearty and full of goodness, it is the perfect way to warm up your day.
Think of this as your cold-weather lifehack: a vibrant veggie-packed broth made even better with rich hummus, soft greens and a little kick of chilli. Plus, it is ridiculously easy to whip up and even easier to polish off.
- Get things started. Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, cover and cook for about 5 minutes until soft and fragrant.
- Build the base. Add the carrots and celery to the pot, sauté for another 10 minutes, then pour in the vegetable broth. Simmer gently for 15 minutes until the vegetables are tender.
- Pasta time. While the soup simmers, cook your pasta according to the packet instructions. You can either cook it straight in the soup or separately if you prefer.
- Add the greens. Take the soup off the heat, stir through the spinach and let it wilt in the warmth of the broth.
- Bring the magic. Once the soup has cooled slightly, stir in a few generous spoonfuls of ChicP Velvet Hummus. Trust us, this is where the magic happens.
- Finish strong. Ladle the soup into four bowls, then garnish with a drizzle of olive oil, a sprinkle of parsley and a pinch of chilli flakes for a little extra kick.
