Pulses: underrated.
This salad: anything but.
To celebrate World Pulses Day (or just Tuesday lunch), we’ve taken the classic green goddess salad and given it a ChicP remix. Lentils, chickpeas, fresh greens and a herby hummus dressing made with our Spinach & Parsley Hummus.
It’s fresh, zesty, packed with plant based protein and tastes like actual effort, even if you threw it together between meetings.
How to Make It:
Make the dressing. In a small bowl, whisk together ChicP Spinach & Parsley Hummus, olive oil, lemon juice and a dash of honey. Add a splash of water if it needs loosening.
Build the base. In a large bowl, combine lentils, chickpeas, cucumber, herbs, spring onions, greens, whatever you’ve got.
Toss it up. Pour over the dressing and toss until everything is well coated and glistening.
Finish + serve. Top with a final drizzle of olive oil and serve straight away or pop it in a container for the ultimate desk lunch.
Why It Works:
You’ve got the creamy zing from the hummus dressing, the fibre fix from the pulses, and the crunch from all those fresh greens. It’s light but satisfying, clean but punchy, and made entirely from stuff your body and your tastebuds will thank you for.
