This vibrant, flavour-packed pizza is the ultimate celebration of creamy hummus, punchy garlic oil and spicy chillies. Perfect for a quick dinner, a weekend treat or a crowd-pleasing snack, this recipe brings together a crisp golden crust, fresh spinach, juicy mushrooms and swoops of velvet smooth hummus for an extra layer of indulgence.
Think of this as a throwback to old-school vegan magic: a creamy, fiery, flavour-stacked pizza that proves hummus belongs right at home on your dough. Plus, it is ridiculously easy to make, just roll it out, pile it high and bake it golden.
- Preheat your oven. Heat your oven to 245°C. If you have a pizza stone, pop it in now to get piping hot.
- Make your garlic oil. In a small pan, warm the olive oil over medium heat, add the minced garlic and cook for 1-2 minutes until fragrant and lightly golden. Take it off the heat and set aside.
- Roll out the dough. Dust a clean surface with flour and roll your pizza dough out to your desired thickness. Place onto a sheet of parchment paper for easy handling.
- Build your pizza. Spread the tomato sauce evenly over the base, leaving a small border for the crust. Top with the sliced mushrooms and spinach leaves. Drop spoonfuls of hummus across the pizza and scatter the fresh chillies over the top.
- Brush the crust. Brush the garlic oil generously around the crust and season the pizza lightly with salt and pepper.
- Bake it golden. Slide the pizza (parchment and all) onto the hot stone or baking sheet. Bake for 10-15 minutes until the crust is golden and everything is bubbling and delicious.
- Slice it up. Let the pizza cool for a couple of minutes, then slice and serve while it is still warm and irresistible.
